
This Golden Spiced Butternut Squash & Lentil Soup is the ultimate comfort food — warm, nourishing, and naturally plant-based. Made with butternut squash, carrots, lentils, ginger, and turmeric, it’s packed with flavor and health benefits. The mix of red and brown lentils gives it a hearty texture, while the warming spices like cumin, garam masala, and smoked paprika make every spoonful deeply satisfying.
I love making a big pot of soup once a week — plenty to enjoy fresh and to keep for the days ahead. Even though it’s 28 degrees outside, this soup is a cozy choice for colder days too. It’s perfect for immune support, meal prep, and tastes even better the next day. Naturally vegan, high in protein, and full of fiber (great for your digestion), it’s a wholesome bowl of goodness that keeps you satisfied and glowing from the inside out.
Ingredients (serves 6-8)

- ½ butternut squash, peeled and chopped
- 4 carrots, peeled and chopped
- 1 onion (red, yellow, or white), chopped
- 4 garlic cloves, minced
- 2–3 inches fresh ginger, peeled and grated or chopped
- 1 cup red lentils, rinsed well
- 1 cup brown lentils, rinsed well
- 1 ½ L vegetable stock (2 cubes + water)
- 1 tsp turmeric
- 1 tbsp smoked paprika
- 1 tsp garam masala
- 1 tsp red chili flakes
- 1 tsp cumin
- Salt, to taste
- Olive oil, for frying
- Chilli flakes, Pumpkin seeds & fresh cilantro, for garnish
Method
- Heat a little olive oil in a large pot. Add the onion, garlic, and ginger, and sauté until fragrant.
- Stir in the carrots and butternut squash, then add the lentils.
- Sprinkle in the spices and stir well so the vegetables and lentils are coated.
- Pour in the vegetable stock. Bring to a boil, then reduce the heat and let simmer for 30–40 minutes, until the vegetables and lentils are soft.
- Blend about half the soup with a stick blender (or transfer to a blender), leaving some chunks for texture.
- Season to taste with salt.
- Serve hot, sprinkled with chilli flakes or pumpkin seeds, or topped with fresh cilantro if you like.
