If there’s one salad that truly captures the feeling of summer in every bite, it’s this Melon Mint Summer Salad. It’s incredibly simple to make and unbelievably refreshing, one of my personal all-time favorites. Whether you enjoy it solo on a sunny afternoon or serve it alongside grilled meats or seafood at a barbecue, this dish is a total crowd-pleaser.

Melon Trio for a Pop of Color
To make this salad extra beautiful and fun, I used a trio of melons:
- Watermelon – classic, juicy, and bold red
- Charentais melon – a sweet, fragrant French variety with orange flesh
- Calia melon – creamy, pale yellow and honey-like in flavor
Feel free to mix and match your favorite melons – cantaloupe, honeydew, or even galia melon would work wonderfully too. Use equal parts or play with the ratios depending on your preference.

Ingredients (Serves 4–6)
- 8 cups of assorted melons, chopped into bite-sized pieces
- 1 cup fresh mint leaves, finely chopped
- 1/3 cup fresh lime juice (about 2–3 limes)
- 1/3 cup honey

How to Make It
- Prepare the dressing: In a small bowl or jar, whisk together the lime juice and honey until the honey is fully dissolved. Set aside.
- Combine the salad: In a large serving bowl, gently toss together the chopped melons and fresh mint.
- Add the dressing: Pour the lime-honey mixture over the salad. Carefully mix everything together to coat, taking care not to crush the delicate melon pieces. (I like to use my hands for this part—it helps keep the fruit intact and gives a more gentle mix.)
- Chill & serve: Let the salad sit for about 10–15 minutes in the fridge to allow the flavors to meld. Serve chilled.
